It preserves these nutrients by thoroughly cooking the food without going above 95°C, as opposed to traditional cookers that normally go well above 100°C :

Why do you destroy nutrients
when you cook food?
Pressure cooking, whether in a pressure cooker or another vessel (steaming under pressure, boiling water), makes the food's mineral salts indigestible, and kills the enzymes as well as most of the vitamins.
Because of their high temperatures, these cause a concentration of animal fats, generating tars and hydrocarbons.
It destroys electrons that are essential to metabolic reactions and cellular exchanges. It radically alters the structure of food, to the point of making certain proteins toxic.

Le Vitaliseur de Marion has been designed on a calculation of proportions: the diameter of the sieve holes, their number and their distribution over the golden section, but also the proportions of the tank, sieve, lid, which, if cut transversally, also correspond to this number.

The curvature of the lid is a crucial feature: it allows the condensation water to slide away along the walls instead of falling onto the food and washing away its flavours and nutrients.

There is only one perforated cooking tier, because a second tier on top would cause the food to be washed. The dimension, number and spacing of the perforations has been very precisely calculated to keep the temperature at the food's core at 95°C.
